Cooking with Curvyology | Coconut Cilantro Shrimp Curry | Crock Pot

The crock pot has officially become best friend!  I love how I can cook without really cooking.  You set it and forget it until the kitchen timer goes off.  It's low key like magic, you leave it a pot full of raw ingredients and come back to a pot with a warm comforting meal with no stirring, simmering, or heaving cooking required.

When I think of crock pot meals I think of roast and really hearty meals.  With that being said when I came across this recipe for Coconut Cilantro Shrimp Curry I was really excited and it was super easy to make and taste delicious!  It tasted fresh and savory at the same time with a tiny kick from the red chili paste.  You have to try this recipe you won't be disappointed.

Ingredients: 

  • 1 lb shrimp
  • 30 ounces coconut milk
  • 15 ounces water
  • 1-2 tbsp red (or green) curry paste
  • 2 1/2 tsp lemon pepper seasoning (I created my own but it wasn't worth the time.  Next time I would just purchase lemon pepper seasoning from the store.  If you are interested in creating the seasoning yourself I've listed how before)
  • 1/4 cup cilantro
  1. Add coconut milk, water, red curry sauce, lemon garlic seasoning and half of the cilantro to slow cooker. Stir to mix well.
  2. Cook HIGH 2 hours or LOW 4.
  3. Add shrimp and cook an additional 15-30 minutes or until shrimp are done. Garnish with remaining cilantro.
Lemon Pepper Seasoning Ingredients 
Zest of 5 Lemons
1 TBSP of Garlic Powder
2 TSP of Salt
1 1/2 TSP of Onion Powder
1 TSP of Pepper
